holiday prime rib dinner for two
- 2 packages (about 4 oz each) fully-cooked beef 'Prime' Rib slices
- 2 tablespoons olive oil
- 1 cup thinly sliced mushrooms
- 1 clove garlic, minced
- 3/4 cup prepared mushroom gravy
- 2 tablespoons dry red wine
Heat oil in large nonstick skillet over medium heat. Add mushrooms and garlic; cook and stir 3 minutes. Push mushrooms to edge of skillet. Add beef slices; cook 10 minutes or until beef is heated through, turning once. Remove beef from skillet; keep warm.
Add gravy and wine to skillet; heat through, stirring occasionally. Serve over beef slices.
Suggestions: Purchase deli mashed potatoes and bag salad for an amazingly fast special meal.
